Agar is a polysaccharide extracted from algae, which has unique gelatinization properties and is widely used in food, medicine, biological science and other fields.
1.Source of agar:Agar is mainly extracted from algae in the red algae family, common algae include Gelidium amansii and Gracilaria. These algae are rich in agar, and through processes such as drying, crushing, extraction, and refining, agar products can be obtained.
2.Chemical composition:Agar is mainly composed of two types of polysaccharides.
                                   Agarose:It accounts for 70%~80% of the total amount of agar, and is a linear polysaccharide with good gelling properties.
                                  Agaropectin:Accounting for 20%~30%, it is a sulfated polysaccharide, which gives agar a certain elasticity and stability.
3.Physical and Chemical Properties:
Appearance: Agar is usually white or yellowish powder or strips. 
Solubility: Agar is insoluble in cold water, but completely soluble in hot water, forming a gel when cooled. Gelation Characteristics: The agar solution is dissolved above 40 °C, and a gel is formed when cooled to 35 °C~40 °C, with high gel strength and good stability. 
Stability: Agar is stable under neutral or weakly acidic conditions, but may be hydrolyzed under strong acid or alkaline conditions.
